Southern Candied Sweet Potato Recipe

We grew a lot of sweet potatoes from our garden last year and this is one of the yummiest dishes we've made with them (not necessarily the healthiest because of all the sugar, but were DELICIOUS!).
This is an old-fashioned, traditional, southern recipe.

Southern Candied Sweet Potatoes
Ingredients:
About 6 normal large sweet potatoes                          1 teaspoon cinnamon
1/2 cup butter                                                               1 teaspoon nutmeg
1 3/4 cups white sugar                                                 1 tablespoon vanilla extract
1/4 cup brown sugar                                                    salt to taste

Directions
Well, in the ingredients above, I said about 6 sweet potatoes, but ours we're all random sized and shaped. First, cut sweet potatoes into slices.

Second, melt butter in a large skillet and add the sweet potato slices.

Third, mix the sugar, cinnamon, nutmeg, and salt together in a bowl.  Cover the sweet potatoes in the sugar mixture and stir.  Next cover the skillet, reduce heat to low, and cook til potatoes are "candied" (takes about 1 hour).  They should be tender and the sauce will turn dark.  Stir occasionally while cooking.  Stir in the vanilla extract just before serving.  Serve while hot. Enjoy!

  1. Great recipe, we do ours quite similar all the same base ingredients and process, we just add molasses or piloncillo it is also called panela (unrefined sugar cane cone) and sprinkled pecans on top.
