Homemade Apple Pie

We had some apples that we're needing used up, so I
decided to make this old fashioned apple pie the other night.
It was a complete success and Jesse and I really enjoyed it.
Here is my Apple Pie from scratch recipe:
 
Ingredients
 
For Crust:
2 cups self rising flour
1/2 cup or so shortening
6 to 8 Tbs. cold water (less or more as needed)
1 egg (used for brushing on for
a more golden crust)
milk (also used for brushing)
 
For Filling:
1/3 cup white sugar
1/3 cup brown sugar
1/4 tsp. salt
1 1/2 tsp. cinnamon
1/2 nutmeg (optional)
3 Tbs. flour
6 to 8 medium apples
a little lemon juice
 
Preheat oven to 400 degrees F
 
You'll need to be sure that you have a clean
and somewhat large countertop or table area ready
for rolling out dough on.
 
Step 1 In a large mixing bowl place
flour and shortening.  Crush the shortening and flour
with a fork until tiny balls form.  Then add the water slowly.
 (pictures were taken with my tablet so I'm sorry for the poor quality)
 Step 2 With floured hands, knead the dough to
form a large ball.  Split dough ball in half. Wrap one
half in plastic wrap and place in the refrigerator.
 
 Step 3 On a floured surface, roll out dough until it
is approximately 2 inches larger in diameter than
the pie pan.
 
 
Step 4 Wrap dough completely around rolling pin
and lift slowly.

Step 5 Unroll dough into pan, press against
all sides, and be very careful not to tear it.
 
 Step 6 Trim edges leaving about a 1/4 inch
of extra dough around edges of pie pan. Then
place pie shell in refrigerator.

Step 7 To make the filling, peel and slice the apples into pieces
about 1/8 of an inch thick or chop them into 1/2" cubes. Put them into a
large bowl and mix with sugars (white and brown), salt, lemon juice,
flour, nutmeg and cinnamon (shake over to cover the top of
mixture). Place in refrigerator.

 
 Step 8 To make a lattice top, roll out dough ball
that you put in the refrigerator. Next cut it into as many
1" wide strips as you can.

Step 9 Remove filling and pie crust from refrigerator.
With the back of a spoon, spread filling into shell.  There
should be enough filling to fill the entire pan and stack up above
the edge at least an inch in the center.  Brush the edges
of crust with a beaten egg.  Next lay the lattice top on by placing
the pastry strips across the top of the apples in a criss-cross pattern.
Cut off the overhanging excess pastry and press the
edges down into the rim.  Sprinkle milk over the top or brush the
lattice with the egg wash. This will help to brown the crust.
Next I dusted cinnamon and sugar over the top
crust for an extra touch.

 Step 10 Bake at 400ºF (200ºC) for 15 minutes. Turn down the
oven to 375ºF for 45 minutes. Remove when top crust is golden brown.
 
And voila! a delicious homemade apple pie!

Also the leftover pie is great for breakfast
the next day.  Enjoy!
